Overview

A cheeky, alcohol-based twist on the traditional pork chop/apple sauce combo.

Also, the first of Friki's "Learn A New Recipe Every Week" resolution for 2008.

Ingredients (Feeds 2)

  • 2 pork chops, trimmed of fat.
  • 1 cooking apple, peeled, cored and sliced.
  • 1/2 a red onion, roughly chopped.
  • "Some" mushrooms, washed and quartered.
  • 1 bottle of decent organic dry cider (n.b. a can of Strongbow is not suitable).
  • A "bit" of grated mature cheddar cheese.
  • Parsley.
  • Nutmeg.
  • Sunflower oil.
  • Salt and pepper to taste.

For Friki's recommended side dish:

  • "Some" new potatoes, washed and quartered.
  • A clove of garlic, crushed.
  • Sunflower oil.

Instructions

  • Sweat down the onion in a frying pan with a little oil.
  • After a few minutes, add the apple, mushroom, nutmeg and some of the parsley, and cook for a further two minutes or until the apple begins to soften.
  • Seal the chops on a hot griddle pan, around one minute per side.
  • Place the chops in an overproof dish, add the onion/apple/mushroom mixture around the sides of each chop and fill bowl with cider. Salt and pepper as required.
  • Cook in pre-heated oven at 200ºC for twenty minutes.
  • Take out of oven, sprinkle cheese on top of each chop, and return to oven for a further five minutes.
  • Meanwhile, boil potatoes in salted water until they begin to soften.
  • Drain pan, transfer potatoes to hot frying pan with oil and crushed garlic. Sauteé until golden brown.
  • Check chops are cooked through. Serve chop with potatoes, a spoonful of the vegetable and apple mix and a drizzle of the sauce.
  • Eat with generous glass of gin and massive fuck-off smile on your face.

Friki Advice: Is ketchup required?

For this meal, ketchup is NOT REQUIRED.
